Vegetables are an essential part of any diet and there are endless ways of using them to add variety and interest to everyday meals. I think beets look very pretty at the farmers market. But, I often get a question of what do you do with them? I personally prefer cooked beets over raw. Cooking beets brings out the sweetness of the vegetable and adds a whole new dimension of taste.

  1. Heat oven to 400°F. Place beets on a piece of aluminum foil and make a pouch out of the foil, sealing it tightly. Bake in the oven for 60 minutes. Remove from oven and let beets steam for 10 minutes.
  2. Meanwhile, whisk together vinegar, mustard, agave nectar or honey and garlic in a small bowl. Season with salt and pepper. Make sure salt has dissolved. Slowly whisk in oilve oil and walnut oil and set vinaigrette aside.

  3. Take cooled beets, remove and discard skins and cut into bite-size pieces. Mix beets with half of vinaigrette, then add Alfa-Alfa sprouts and chopped cilantro. Add the rest of the vinaigrette if needed. Transfer salad to plates and top with walnuts.
