Walnut Loaf – Vegetarian Walnut Loaf – onion (choppedâ
Preheat oven to 365°F. Line 9-inch loaf pan with parchment paper and slightly oil it.
Sauté onions in oil until soften. Add chopped mushrooms. I use portobello or cremini mushrooms. Add a pinch of salt and pepper. When the mushrooms release the juice, add chopped garlic, dried herbs, and continue to cook. Once the pan begins to dry out add red wine and cook until it is reduced. Remove from the heat when the mixture is still moist but there is no extra liquid. Let it cool.
In a bowl, mix the rice and chopped nuts together. Add the eggs, cooled mushrooms and fresh herbs. Mix well. Add more salt and pepper if needed.
Fill the loaf pan with the nut mixture, smooth the top with a spatula. Decorate with slices of mushrooms, or nuts.
Bake for about an hour at 365F or until the loaf is firm. Let loaf cool for 10-15 minutes before removing from loaf pan.
Serve with vegetables or Vegan Barbeque Sauce.
