Low Carb Spaghetti Squash

Spaghetti-squashIngredients:

  • One 3 Lb Spaghetti Squash
  • 1½ cups Onion, chopped
  • 1½ Tbsp    Extra Virgin Olive Oil
  • 5 Medium Tomatoes, chopped
  • 3 Medium Zucchini cubed
  • ¼ cup    Fresh Snipped Basil
  • 2 cloves    Garlic, minced
  • ¾ tsp Salt
  • ¼ tsp Fresh Ground Pepper
  • ¼ cup Grated Parmesan Cheese, optional

 Directions:

  1. Preheat oven to 350 degrees. Line a baking pan with foil. Using the tip of a sharp knife, pierce the squash in several places. Place on baking pan and bake for 1 hour and 15 minutes, or until tender.
  2. Meanwhile, in a large pan, cook onions in olive oil until tender. Add tomatoes, zucchini, basil, garlic, salt, and pepper. Bring to a boil, reduce heat to simmer, cover and cook for 3 minutes. Uncover and cook for about 6-8 minutes, stirring often, or until the zucchini is crisp-tender; keep warm.
  3. Remove squash from oven and carefully slice in half. Remove seeds and discard. Use a fork to shred the squash into long strands into a bowl.
  4. To serve, place the spaghetti squash on a serving platter or individual plates. Pour sauce over squash. Garnish with Parmesan cheese, if desired.

  1. My roommate is not too crazy about vegetables, but this recipe did inspire her to cook squash! Can not wait to see how it comes out.

    • My favorite way of eating is easy and delicious. I scoop out a cooked squash, and sauté the spaghetti along with thinly sliced leeksin olive oil. Salt and pepper is all I add. Ohh yum!

    I LOVE spaghetti squash as “pasta”…with marinara sauce. But I don’t like cutting squash and scraping out the seeds. Once it’s done – the rest is easy! :)

  4. My family loves spaghetti squash. It’s a great alternative to spaghetti. I usually cook it in a microwave, but cooking it in the oven sounds even better!

  5. In the past eating carbs gave me a happy feeling. I still have a lot of work to do and work out the perfect eating plan. But I know that low carb spaghetti is going to be part of the my plan.
